I love potatoes. In fact, it’s one of my favorite foods. During Irish Heritage Month, I incorporate this Pot O Gold Scalloped Potatoes recipe into the month’s menu at least twice, using several variations. Depending my mood, I may include broccoli, bits of ham, or turn it into a one dish meal by adding peas, onions and broiled pork chops.
Scalloped potatoes always remind me of a pot of gold with it’s warm golden glow and creamy consistency. I enjoy it because of the comfort factor and the kids adore the idea of having a pot of gold of their own. This recipe is great for a couple of other reasons too. It’s quick and easy to make as well as very healthy, especially if you have dietary restrictions.
3 medium potatoes, peeled and thinly sliced
1/3 C. grated Parmesan cheese
2/3 C. skim milk
½ teaspoon paprika
Fresh parsley (for garnish)
Butter flavored cooking spray
Coat a 2-quart microwave dish with cooking spray. Layer potatoes and cheese in dish. Pour milk over potatoes and sprinkle with paprika. Cover and vent. Cook on high in microwave for approximately 12 minutes (cooking time may vary.) If you want to give your scalloped potatoes that “baked” look, remove the cover and broil for 2-3 minutes to brown the top potatoes. Top with fresh parsley. Serves 4-ish
