Mother’s Day Fresh Fruit Salad Recipe

This Mother’s Day fresh fruit salad recipe will give Mom something special to remember. This fruit salad can be prepared at breakfast, as a side dish at lunch, or as a dessert after dinner. Almost any fruit can be used but our favorite fruit salad combination includes pineapple, watermelon, peaches, and berries.  Although kids will need a little help cutting and slicing the fruit, this is a very easy recipe for them to prepare and serve to Mom.

Ingredients:

1/4 C of fresh peach slices
1/4 C of fresh pineapple slices
1/4 C of fresh grapes or blueberries
1/4 C of fresh kiwi slices
1/4 C of fresh orange cubes
1 to 2 round slice of fresh icebox watermelon

Instructions:

On a serving plate, add the peach slices. Layer the pineapple and kiwi slices over the peaches. Sprinkle the grapes and orange cubes over the top. Set aside.

Cut the bowling ball size watermelon in half, crosswise, not from end to end. Then cut a 1 inch thick slice from one half of the melon. Using heart or star shaped cookie cutters, cut out 8 to 10 pieces of the watermelon. Depending on the size of the melon and cookie cutters, you may need another slice of melon.

Place the watermelon cut outs around the outside edge of the plate. Serve to mom at breakfast with her favorite beverage or at a different meal as a sweet side dish or dessert.

Makes 1 to 2 servings

Variations:

If you want to make this fruit salad a little fancier or juicier, you may want to top the fruit with a yogurt dressing. To do this, just add 1-2 tablespoons of very cold, almost frozen, plain or fruit yogurt.
