Nothing says “country cooking served here” like offering fluffy, golden-brown cornbread to eat with a meal. To bring friends and family together like in the good old days, whip up a pan or two of cornbread to go with your next meal!
If you really want to experience true old fashioned country cooking, use a cast iron pan when cooking and serving this cornbread recipe.
1 ½ cups cornmeal
2 ½ cups milk
2 cups all-purpose flour
1 Tbsp baking powder
1 tsp salt
2/3 cup white sugar (or to taste)
2 eggs, lightly beaten
½ cup vegetable oil
Preheat the oven to 400 degrees Fahrenheit and lightly grease your favorite cornbread pan…you know you have one. 😉 Set aside.
In a medium-size bowl, Mix together the cornmeal and milk. Set it aside while you mix the dry ingredients, about 5 minutes.
In a large bowl, whisk together the flour, salt, sugar and baking powder. When completely combined, add the cornmeal/milk mixture, eggs and oil. Mix until the batter is smooth. Pour the cornbread better into your greased pan.
Bake in the oven for about 30 minutes or until cooked through and golden brown on top. Remove from oven when an inserted wooden toothpick comes out clean.
Depending on the the meal’s main and side dishes, you may just want to serve hot with butter (on the side). With some dishes, you may want to crumble a piece in with your side dish serving or even your serving of the main dish. I like to use this crumble technique, especially when serving chili or vegetable beef soup. Try it, you’ll like it!
